The Persian blue salt is a coarse salt with sapphire-colored crystals. It is extracted from a mine of pure, unpolluted crystallized sea salt which have formed over 260 million years ago – which means that this is a delicate salt oozing history and complexity.
The Persian Blue Salt has a smooth, mild taste, which means that it won’t cover delicate flavors. But it does have a strong, coarse texture, maintaining a clean bite. Use the Persian blue salt in order to add a touch of glamour to the rims of cocktail glasses, or sprinkle it over white fish or carpaccio as a final touch.
Its blue hue still remains a mystery, since it takes this color from a strange interaction between sylvite, dispersed metallic sodium, and other alloy metals of this salt.
